Why a miller

Traditional shortbread is made from three ingredient groups and nothing else: flours, fats and sweeteners. Every entrant in the championships must enter the Traditional class, whatever else they choose to bake. With so few ingredients permitted, the flour is doing a large share of the work, and the judges will taste the difference.

A Scottish mill backing Scotland's shortbread championship also makes sense on its own terms: Carr's mill in Kirkcaldy, our championships in Inverness.
